FRITTO IN BRODO DHASHI &#8211; AGE DASHI DOFU"},"content":{"rendered":"\n<p>TOFU&nbsp; FRITTO IN BRODO DHASHI &#8211; AGE DASHI DOFU<br><br>Oramai conoscete tutti il mio amore spropositato per la cultura giapponese in generale e la cucina giapponese in particolare ed oggi vi propongo questo piatto che per me rappresenta un vero comfort food.<br>La ricetta che trovate in questo post \u00e8&nbsp; quella originale ma vi suggerisco due alternative.<br>La prima alternativa \u00e8 per semplificare la ricetta se non avete a disposione tutti&nbsp; gli ingredienti per il brodo dashi&nbsp;&nbsp; consiste nel sostituirlo con del brodo di pesce ( io ho provato il brodo granulare knorr ed \u00e8&nbsp; un valido surrogato).<br>La seconda alternativa consiste nel sostituire il brodo dashi con del brodo vegetale a cui aggiungere la salsa di soia ( il sapore sar\u00e0&nbsp; diverso, meno inteso ma altrettanto gradevole).<br>.<br>Se vi piace la cucina giapponese troverete altre semplici&nbsp; ricette nelle mie&nbsp; stories in evidenza &#8220;giappone cucina&#8221;.<br>.<br>INGREDIENTI:<br>.<br>300 gr di Tofu<br>Farina q.b.<br>Olio di&nbsp; semi per friggere q.b.<br>1 cucchiaio di salsa di soia<br>1 cucchiaino di sake<br>1 cucchiaino di mirin<br>Zenzero grattuggiato q.b.<br>Erba cipollina<br>Per il brodo ( dashi):<br>1\/2 litro di acqua<br>5&nbsp; gr di Alga nori<br>1 cucchiaio di bottarga<br>PROCEDIMENTO:<br>Tagliare il tofu a cubetti, asciugare con della carta assorbente ed infarinare, poi friggerlo in abbondante olio di semi fino a doratura.<br>Nel frattempo preparare il brodo:<br>Lasciare l&#8217;alga in acqua&nbsp; per mezz&#8217;ora poi portare a bollore ed aggiungere la bottarga.<br>Lasciar&nbsp; riposare per mezz&#8217;ora poi filtrare il brodo.<br>Unire al brodo dashi il mirin, la salsa di soia ed il sake portare nuovamente a bollore e far evaporare l&#8217;alcool.<br>Completare il piatto adagiando il tofu fritto in una ciotola, coprire con brodo caldo, spolverare con zenzero grattuggiato ed eventualmente decorare con erba cipollina.<br><a href=\"https:\/\/www.instagram.com\/explore\/tags\/cucinagiapponese\/\"
