Arrotolare l\u2019arista ripiena su se stessa, poggiare i rametti di rosmarino sul rotolo di arista ed chiudere il tutto con lo spago da cucina. Scaldare in una padella capiente l&#8217;olio e far dorare l\u2019arista avendo cura di sigillare&nbsp; tutti i lati. Cuocere in forno e gi\u00e0 caldo a 200\u00b0C per circa 30-40 minuti. A cottura ultimata, tagliare l&#8217;arista a fette, nel frattempo raccogliere il sughetto rimasto nella teglia, e metterlo in una padella se necessario,&nbsp; aggiungere un goccio di latte, farlo
